Alsatian choucroute garnie and regional wines
Dry white wine from Alsace: a regional and traditional pairing
In the typical sauerkraut recipe, the cabbage is simmered with bacon in white wine before adding the other ingredients. Tradition dictates that guests are served the same wine used to cook the sauerkraut.
In general, a dry white wine from Alsace (or even a Crémant d'Alsace) is served to respect the local pairing. You could therefore opt for a glass of Pinot Blanc, Riesling or Sylvaner. These grape varieties produce dry white wines that pair perfectly thanks to their great freshness and fruity, mineral character. These notes will complement the smokiness of the charcuterie and the acidity of the cabbage.
For a successful food and wine pairing, we recommend a Pinot Blanc or Riesling from the Chasseurs de Lune range. Or opt for our latest addition: the dry, racy and fruity "Blanc Bec."
Alsace red wine: a possible pairing
For red wine lovers, there is of course an Alsatian pairing for sauerkraut: a good Pinot Noir from Alsace. Choose a Pinot Noir that is not too tannic and rather light, which will go well with the meats in this dish. Among our wines, a glass of Pinot Noir from Chasseurs de Lune will do the trick! Serve it not too cold, between 14 and 16°C, to enjoy it to the fullest!
What wine goes well with seafood sauerkraut?
Seafood sauerkraut, or "choucroute aux poissons," existed long before Alsatian sauerkraut with meat. Yes, the myth is debunked! It's hard to admit for us, as we are purebred Alsatians..
Seafood sauerkraut was originally a dish eaten by fishermen and boatmen, combining several types of fish. It is now making a comeback and is becoming increasingly popular.
But what should you drink with seafood sauerkraut? As with traditional sauerkraut, a good Alsace white wine is the perfect accompaniment to this dish. The freshness and minerality of a Riesling, Pinot Blanc, or Sylvaner will go very well with the acidity of the cabbage and the salty notes of the fish.
To accompany this dish and bring out its flavors, a glass of Sylvaner will delight your guests' taste buds.
A quintessentially convivial dish, sauerkraut calls for equally generous wines capable of balancing its acidity and bringing out its flavors. For a choucroute garnie, choose a dry white wine from Alsace such as a Riesling or Pinot Blanc. If you are serving a seafood choucroute, opt for a fresh, mineral Sylvaner. And for the more adventurous, a light Pinot Noir or Crémant d'Alsace will pleasantly surprise your guests. Bon appétit!
