Baeckeoffe, Baeckaoffa, or Bäckerofen?
Alsatian is a French dialect derived from German. It is not very easy to understand for anyone who does not speak it on a daily basis, especially as there are many variations depending on which department you come from: Bas-Rhin or Haut-Rhin. Baeckeoffe, with an E, pronounced [bèke-ofe], originates from the Bas-Rhin and the German-speaking Moselle region. In the Haut-Rhin, it is more commonly known as Baeckaoffa, with an A. "Bäckerofen," literally "bread oven," comes from the German language. Note that baeckeoffe can also be spelled baeckeofe, bäckeoffe, or bäckaofa.

Baeckeoffe with three meats and dry white wine
When it comes to white wines, Baeckeoffe pairs beautifully with many dry white wines from Alsace.
For a fresh and light pairing, opt for a Pinot Blanc. With its subtle fruity notes and slight roundness, it will perfectly complement the melt-in-the-mouth potatoes and marinated meats of Baeckeoffe.
If you had to choose just one dry white wine, Riesling would be the perfect accompaniment to your dish. The nose is marked by floral notes and exotic fruit aromas, and the palate is characterized by incomparable finesse and a beautiful aromatic persistence.
Opt for an expressive Riesling des Chasseurs de Lune or, among the Grands Crus, a Riesling Grand Cru Mambourg for greater complexity.
For those who prefer a slightly rounder wine, opt for a Pinot Gris Zinnkoepflé with aromas of undergrowth, honey, and floral notes. A powerful and complex white wine to enjoy without hesitation with your Baeckeoffe.
Baeckeoffe and red wine... powerful!
The many aromatic flavors that blend in Baeckeoffe and its candied texture call for powerful red wines.
The Pinot Noir Exception, with its aromatic nose and notes of red and black fruits, is the perfect match. On the palate, it reveals ripe tannins and fruity aromas, giving it harmony and length and allowing it to pair perfectly with Baeckeoffe.
