TRUITE GRAVLAX & EXTRA-DRY CRÉMANT
This beautiful pairing with notes of Alsace and Asia will take you on a journey and awaken the curiosity of your taste buds and those of your guests. The Chef has chosen to accompany the Alsace trout with Bibeleskaes au Nori, a famous seaweed used in Japanese cuisine, which adds a hint of iodine to the fromage blanc.

BEEF TARTARE, OYSTERS & SYLVANER FROM LES CHASSEURS DE LUNE
Discover this fresh, summery recipe, a delicious combination of land and sea! It's unexpected, but definitely worth trying! This Sylvaner, made from old vines, has a lovely complexity that will surprise you when paired with this tartare with its salty notes.
DUCK FILLET, PEPPERS, MIRABELLE PLUMS & MOON HUNTER MUSCAT
If there's one pairing you wouldn't expect, it's duck and Muscat. And yet! The peppers and mirabelle plums, lightly roasted in the oven, accompany this dish and add a sweet and fruity touch to the palate. The chef has chosen to serve this dish with a tangy sauce to balance the flavors.
