Making the sweet potato cream sauce
Peel the sweet potato and cut into cubes. Place the cubes in a saucepan with the water and season with salt and pepper. Bring to the boil, then cook over medium heat for around 25 minutes. Blend and add the cream. Adjust the seasoning if necessary, then place the preparation in a siphon. Set aside. -
Cook the soft-boiled eggs
Heat a pan of water. When the water comes to the boil, plunge in the eggs and allow to boil for 6 minutes. Refresh the eggs under cold running water and gently roll to remove the shells .

Plating
Place a small amount of sweet potato cream in a soup plate and add theegg. Garnish with a few cubes of feta and a sprinkling of roasted hazelnuts.
