Identity
This confidential vintage is the result of a plot-by-plot selection of the limestone hillsides overlooking the noble valley. A blend of cask-aged and concrete, this Sylvaner is a gastronomic wine.
Winemaking
Hybrid fermentation and maturation: half of the cuvée was vinified in oak barrels and the other half in ovoid concrete vats for 10 months.

Pale yellow color with golden highlights.
Nose
Lovely woody and toasty notes. Fruity freshness on opening (white peach, quince).
On the palate
Powerful wine with a subtle liveliness. The mouth-watering acidity blends into the wine and reveals aromas of grapefruit and pear.
What to eat with Sylvaner Exception?
It goes wonderfully with poultry and fish dishes in sauce, pan-fried scallops, or even dry goat's cheeses. We recommend that you decant this wine to appreciate its complexity.
