Making the pancake batter
Melt the butter in the microwave and slightly heat the milk, which should be barely warm to avoid lumps. Mix the flour, sugar and salt in a large bowl. Add the eggs, melted butter, then gradually add the milk, beating with a whisk to avoid lumps. Depending on your taste, add beer or rum, orange blossom water, vanilla and let stand for 30 minutes before cooking.

Pancake cooking
Heat a knob of butter in the pan and place a ladleful of batter on top. Cook the pancakes on each side until they are golden brown and set them aside on a plate, covering them with a sheet of aluminum foil to keep them warm and soft. You should get between 15 and 20 pancakes with a 20 cm diameter pan.
