Cooking the polenta
Heat the water in a saucepan and pour in the polenta, then mix well and add salt and pepper. Cook over low heat until it comes away from the pan (about 3/4 minutes) -
Preparation of the polenta
Remove from the heat and add the parmesan cheese, chopped basil and dried tomatoes cut into pieces. Pour this preparation into a rectangular or square dish and place in the refrigerator until completely cooled. (1h minimum) -
Brown the polenta cubes
Once the dish is cold, cut cubes of polenta. Heat up a pan with olive oil and fry the cubes on both sides. They should be golden brown. Place on paper towels before serving.
