Mushrooms with Roquefort, Tuna Bites & Crab-Mango Spoons
Caroline SPIELM ANN and Arnaud AMANN The cooperators will explain how to prepare three types of appetizers: tuna bites, crab and mango spoons, and mushrooms with Roquefort cheese! All you need to do is treat your guests and shine at the aperitif.

Preparation of the mushrooms with Roquefort cheese
Brown the mushrooms in a frying pan with a little oil. Add the Roquefort cheese, melt it and add cream to liquefy it. Depending on your personal taste, you can add more Roquefort. For the presentation, you can present this preparation in the form of a verrine

Preparation of the tuna bites
Blend all ingredients together for about 1 minute. If you don't have a blender, crush the tuna coarsely, then add all the ingredients as you go, and mix everything together. Put the preparation in small moulds and cook for about 20 minutes at 160°C. This preparation can also be a starter. In this case, serve with a small salad and mayonnaise. -
Preparation of the crab-mango spoons
Peel the avocado and cut it into strips. - Crumble the crab meat into a dish and sprinkle with lemon juice. Cut the mango into strips or cubes. In each spoon, place a little crab meat, a little avocado and a little mango. Finish the presentation with a little Espelette pepper and herbs for decoration.
