Preparation of the florets
Preheat oven to 200°C. Fold the puff pastry in 2 and cut out with a cookie cutter. Place the shapes on an oiled baking sheet. Brush the shapes with the egg yolk and bake for about 10 minutes. Remove from oven and set aside. -
Preparation of the snail fricassee
In a large saucepan, heat salted water to cook the pasta. In a frying pan or wok, chop and blanch the shallot with the oyster mushrooms in a little oil. Add the carrots cut into thin strips. Once the preparation is ready, add the short boiled snails to the pan. Season to taste with salt, pepper, black curry and Madagascar black pepper. Squeeze half of the lime and pour the juice on the preparation. Let simmer. -
Preparation of the dish
Place the pasta in the plate and then the preparation on top. Put a little lime zest on the preparation and decorate with the fresh herbs and cherry tomatoes.
