Rooster with Riesling

Today we bring you a traditional Alsatian recipe: coq au Riesling. Easy and quick to make, this dish is usually reserved for festive days like Christmas or New Year's Eve, but can be served for any other occasion.

Ingredients

Preparation:

  1. Brown the rooster

    Cut the rooster into pieces. In a casserole, over medium heat, add salt and pepper and brown the rooster pieces on each side in the butter for about 15 minutes.
  2. Cook the whole thing and let it simmer

    Add the finely chopped shallots, stir and let melt for 10 minutes over low heat, while watching. Add the Riesling, cover and simmer over low heat for about 1 hour. Take out the pieces of poultry and set them aside. Add the bouquet garni composed of aromatic herbs such as thyme and bay leaf. Wash and peel the mushrooms, cut them into thin strips and add them to the casserole. Let simmer for 30 minutes.
  3. Let it reduce

    Pour the cream into the casserole. Remove the bouquet garni. Let the sauce reduce for 10 minutes.
  4. Dressing and service

    Arrange the pieces of meat with the sauce on a plate. Serve withspaetzlesor rice.
