Doughnuts with jam or chocolate filling

Making the doughnuts
Crumble the baker's yeast into a bowl. Add 100 g of flour and 4 tablespoons of warm milk. Mix well and let stand in a warm place for 2 hours.Pour the remaining 400 g of flour into a large bowl. Add the sugar and salt and mix well. Make a well in the center. Pour in the eggs and stir with a whisk. Add the sourdough and milk while stirring with a whisk. You should obtain a very homogeneous dough. Let it rise again for a few hours.

Working with doughnut dough
After this rest, knead the dough again and roll it out on a floured work surface or board. Cut out 6 cm diameter circles with a cookie cutter.Place 1 tablespoon of jam in the middle of each circle and cover with a second round of dough to form a doughnut. Pinch the edges together well, so that they stick together (with a little water or milk if necessary to seal the edges). Let stand for 45 minutes at room temperature.

Baking the doughnuts
Heat some frying oil in a pan and dip the doughnuts in it. When they are golden brown, drain them on paper towels and sprinkle them with powdered sugar. Enjoy them warm or cold!
