We have teamed up with talented chef Juan Arbelaez to bring you a delicious recipe that is sure to delight your taste buds and those of your guests this holiday season!
Juan has decided to make for you aceviche of lean meat with a Gewurztraminer and grape sauce.Sweet and exotic flavors sublimated by an Alsatian food and wine pairing: theGewurztraminer Grand Cru Zinnkoepflé !
The acidulous notes of lime and red onion counterbalance the sweetness of the cuvée, while coriander adds an exotic touch in harmony with the spicy, mango, honey and pepper notes of the Gewurztraminer.

Preparation of the filet of lean meat
Dice your tenderloin. -
Making the ceviche
Slice the onion, seed the grapes and cut them in half lengthwise. Add the juice of half a lime to the lean mixture, grapes and red onion. Then add 3 tablespoons of white wine, salt, Espelette pepper, and a few leaves of coriander cress.
Heat the remaining white wine until it boils and pour it over the ceviche. -
