Juan has decided to make you a Maigre ceviche with a Gewurztraminer and grape sauce. Mild, exotic flavors enhanced by an Alsatian food and wine pairing: Gewurztraminer Grand Cru Zinnkoepflé!the tangy notes of lime and red onion in the recipe counterbalance the sweetness of the wine, while coriander adds a touch of exoticism that harmonizes with the Gewurztraminer's notes of spice, mango, honey, and pepper. A multi-faceted chef
Juan Arbealez left Colombia and settled in France at the age of 18. He had only one thing in mind: to fulfill his dream of becoming a chef. Not easy with no money in his pocket... but the young Colombian was determined to get what he wanted. He managed to get into the prestigious Cordon Bleu school as an assistant... and graduated at the top of his class!
He then worked with some of the greatest chefs, from Pierre Gagnaire to Eric Fréchon and Éric Briffard, and Juan's career became increasingly prestigious against the backdrop of Parisian palaces.
The talented chef saw even further and wanted to spread his wings. He set out to build a career in his own name, promoting accessible cuisine and sharing.
It's fair to say that he has risen to the challenge, as he now has 14 restaurants.
The young entrepreneur has more than one trick up his sleeve, and it's not just in the kitchen that he proves it.
Highly publicized on television and social media, Juan has built up a loyal following. This has enabled him to reinforce his mission: to demystify home cooking.
Deeply committed to preserving the planet, he doesn't hesitate to speak out on issues that are close to his heart, such as his involvement with organizations like NoMorePlastic, Plan International, and Action Against Hunger.
