Why are botiches (bins) used for picking?

At Bestheim, the grapes used for crafting Crémants or those from Grand Cru plots are harvested entirely by hand. The bunches are picked and sorted, then taken to the press. This meticulous work is performed by the pickers, who each year devote their cheerful good humour to the quality of our production. But why are the bunches of grapes transported in yellow bins in Alsace?
