As the year comes to a close, we have teamed up with talented chef Juan Arbelaez to bring you a delicious recipe that is sure to delight your taste buds and those of your guests for the holiday season!

Juan has decided to make for you aceviche of lean meat with a Gewurztraminer and grape sauce. Sweet and exotic flavors sublimated by an Alsatian food and wine pairing: theGewurztraminer Grand Cru Zinnkoepflé ! The tart notes of lime and red onion in the recipe counterbalance the sweetness of the wine, while coriander adds an exotic touch in harmony with the spicy, mango, honey and pepper notes of Gewurztraminer. A food and wine pairing to delight you!

A multi-faceted chef

Juan Arbealez left his home country of Colombia and moved to France at the age of 18. He had only one idea in mind, to realize his dream: to become a chef. Not easy without a penny in his pocket... but the young Colombian is determined to get what he wants... He manages to enter the prestigious Le Cordon Bleu school as an assistant... He will graduate at the top of his class!

He then worked with the greatest, from Pierre Gagnaire to Eric Fréchon, via Eric Briffard, Juan's career became more and more prestigious and this against the backdrop of the Parisian palaces.

The talented chef sees even further ahead and wishes to fly on his own wings. He is going to write a career in his own name, while advocating an accessible and sharing cuisine.

We can say that the challenge was successful because today there are 14 restaurants.

The young entrepreneur has more than one trick up his sleeve, and it's not only in the kitchen that he proves it.

Juan has developed a community of followers, both on TV and on social networks. Thanks to this, he reinforces his approach: desacralize cooking at home.

Deeply committed to the preservation of the planet, he does not hesitate to communicate on subjects that are important to him such as his commitments with associations (NoMorePlastic, Plan International, Action Against Hunger.).
