Asparagus salad with crushed almonds & Muscat Classic

Original recipe: Asparagus salad with julienned asparagus and crushed roasted almonds

The asparagus season is launched in Alsace! What better way to celebrate it than with a beautiful salad of fresh local asparagus! Low in calories, full of vitamins and composed of 92% water, asparagus is perfect for light spring meals. It is rich in fibre and nutrients, so don't deprive yourself!

To sublimate this beautiful product, Chef Emmanuel Stemper had the idea of preparing a vinaigrette made with cider vinegar, amaretto and grape seed oil.

Timeless wine and food pairing : Muscat Classic

Our Muscat Classic is a wine from a selection of terroirs, located at the entrance to the Westhalten valley. Facing south/south-west, these soils are predominantly limestone and are covered with loess. These terroirs are also very dry because it rains less each year than in Montpellier!

A beautiful slightly golden colour leads us to discover a powerful and fine nose, with aromas of fresh grapes and orange blossom. The attack is round, fruity and crunchy on the palate. Its length is astonishing and its finesse is characteristic of the great Alsatian Muscats. A gourmet wine to be savoured at will!

Bon appétit!
