Which wine with the foie gras?

Foie gras is an exceptional dish served at the table during festive moments and celebrations. It is the icon of the end of the year celebrations. Foie gras from Alsace or foie gras from the Southwest, duck foie gras or goose foie gras, foie gras confit, cooked foie gras or semi-cooked foie gras, it is not often easy to find the right food and wine pairing. So, which wine to serve with foie gras?

Which white wine with foie gras ?

Foie gras at the beginning of the meal

On toasted toast, brioche bread or on a slice of gingerbread, foie gras will sublimate your aperitif or your starter.

To accompany your foie gras as an appetizer or aperitif, there is nothing like a glass of Crémant d'Alsace from an old vintage where the toasted aromas of the tasting can be found. An older gastronomic vintage, such as the Crémant "Qui Chasse la Lune, Récolte le Soleil", with its mineral and creamy, toasted, dried fruit flavors, will go perfectly with this type of dish. The crystalline freshness of this sparkling wine, as well as its fine bubbles, will accompany foie gras in a lighter way.

Foie gras at the end of the meal

It is customary to serve foie gras at the beginning of a meal, often accompanied by a glass of sweet, even syrupy wine. However, all the amateurs will tell you, this irrevocable agreement is an attack on your palate. Indeed, when you taste foie gras at the beginning of the meal accompanied by a glass of Gewurztraminer Vendanges Tardives for example, the high sugar content of this type of wine will immediately saturate your palate, preventing it from fully enjoying the rest of the meal.

We therefore advise you to serve your foie gras rather like a dessert, after the dish but before the dessert. You will then be able to take full advantage of delicious beverages such as a Pinot Gris Vendanges Tardives or a Gewurztraminer Sélection de Grains Nobles and thus impress your guests! These bottles of wine will delight foie gras lovers!

Dare the foie gras & red wine

With a pan-fried foie gras, choosing a red wine is a must! Prefer a wine a little old, a wine that you will have preciously kept in your cellar while waiting for the most opportune moment. The supple and melted tannins accompanied by subtly spicy aromas will help the flavors of the foie gras to blossom.
